Summer Recipes | Stuffed Potato Skins & Strawberry Shakes

Welcome back!

I am so tired! We had some friends over last night and stayed up til the fire in the garden died. Today I wanted to share a couple of recipes which are nice for summer parties or to serve on the side of a BBQ. We made them last night and they went down a storm! The potato skins are a favourite recipe of Kierans, and we rarely have any left as everyone enjoys them so much! The milkshakes are super easy and a little treat for grownups. Just make sure they’re out of the reach of little hands if you have children at your party!

Stuffed Potato Skins

  • Jacket potatoes
  • Sour cream
  • Cheddar cheese, grated
  • Onion, diced

Prick the potatoes all over with a fork and microwave for 10 minutes. Turn the potatoes over and microwave for another 10 minutes. Cut the potatoes in half and scoop out the insides (be careful not to split the skins). In a mixing bowl, mix all the cooked potato, diced onions and sour cream until it’s smooth. Stuff the mixture back into the skins and lay out on a baking tray. Sprinkle with cheddar cheese and bake until golden and the cheese is melting. Delicious!

Strawberry Milkshake Cocktail

  • Strawberry Nesquik
  • Milk
  • Strawberry Liquor (we used Mickey Finns)

Put all the Nesquik in a jug and add a little milk, stirring until it forms a paste. Add half of the strawberry Liquor and stir well. This will be a base for around 20 shakes, depending on the size of your glasses. Pour a little of the mixture in (around 2 double measures) and top the rest up with milk! Stir well. You could also do a chocolate version and use Bailey’s or a chocolate liquor with chocolate milkshake. They’re really nice and refreshing with burgers off the BBQ and aren’t too strong either! I used some cute milk bottles from Home Bargains, they’re only 59p each and come with chalk to write on the label.
